Turkish Flatbread

Pull apart bread with sesame or za'atar.

Ingredients:
1 3/4 Cup Warm Water
1 Tbsp. Yeast
4 Cups Bread Flour
1 1/2 tsp. Salt
Wash:
1 Tbsp. Agave Necatar
1 Tbsp. Water
Optional:
1-2 tsp. Za'atar OR
1-2 tsp. Sesame Seeds

Method:
Let yeast bloom in warm water. Add the yeast and water to the flour and salt in a bowl or the bowl of an electric mixer. Kneed until the dough comes together, is smooth and springy. Let rest to double in size.
Preheat oven to 425 degrees, insert baking stone if using. Divide the dough in half. Gently press and stretch dough halves into oval shapes about 1" thick. Let rest covered for 15 minutes.
Mix agave and water. Brush the dough with agave mixture. With your fingertips, press a pattern into the dough. Press around the edge of the dough, an inch or two away from the edge (leaving like a pizza crust) and then make a crisscross pattern within that circle.
Bake for 15-20 minutes or until done. It should be crispy on the outside and soft in the middle. The color should be similar to the photo above. Not too brown but also not too blonde. Enjoy!
