Sour Dough Starter

Easy button way to get a starter going.

You will need:
2 tsp. Active Dry Yeast
1 tsp. Sugar
6 Cups Warm Water, divided
6 Cups Bread Flour, divided
4 Cup Container
Cloth, to cover
Day 1: Dissolve yeast in warm water. Add sugar and bread flour. Cover with a cloth and set aside for 24 hours.
Day 2: Remove 1 cup of starter and discard the rest. Add the starter back into your container and add 1 cup of flour and 1 cup of warm water, mix well. Repeat for days 3-6.
Keep your starter in the fridge, in a lidded container and feed once a week, removing 1 cups worth of flour, clean the container, replace the cup of starter in the container, add 1 cup of flour to it, 1 cup of warm water and mix.
The liquid that forms on top of your starter is an indicator that it is hungry. It is called hooch. Pour off the hooch before stirring and feeding / using.
