Wonton Noodle Soup

Dumplings with tempeh & mushrooms.

Vegan Wonton Noodle Soup

This recipe is a wonderful conversion of a classic soup. Noodles make the dish heartier and can be left out, if desired.


Serves: 4; 20 wontons


Ingredients for broth:

6 Cups Vegetable Stock

2 Cups Porcini Liquid (see below)

3 Tbsp. Tamari or Soy Sauce

4 Green Onions

3" Ginger, sliced

3 Garlic Cloves, smashed


Boil & Simmer all ingredients for 20 minutes with a lid. Remove onions, garlic and ginger pieces. You will use this broth to cook your wontons and vegetables.


Ingredients for wontons:

4 Oz. Tempeh, rinsed, simmered 10 minutes in water & chopped to a ground texture

.5 Oz. Dried Porcini or Shitake Mushrooms

1 Tbsp. + 1 tsp. Tamari or Soy

1/2 tsp. Ginger, fine mince

1/4 tsp. Sesame Oil

1/4 tsp. Coconut Sugar (white is fine too)

1 tsp. Rice Vinegar

1 tsp. Cornstarch

1 Garlic Clove, fine mince

1 Green Onion, chopped

20 Wonton Wrappers, keep covered so they don't dry out


Making wontons

Rehydrate mushrooms in 2 cups of boiling water for 15 minutes, reserve liquid and add to your broth, chop mushrooms well and add to wonton ingredients.


Add all wonton ingredients (except wrappers) to a bowl and mix well. Take a wonton wrapper and moisten all four of the edges with water. Add 1 tsp of filling to the center of your wonton wrapper and fold up so that all the edges meet at the top and it creates a little purse. Make sure it is well sealed.


Additional Ingredients:

4 Bok Choy, quartered or any green you like such as broccoli

Oyster Mushrooms, or any mushrooms you like such as crimini

10 Oz. Noodles such as ramen, buckwheat, soba or udon noodle


Putting it all together:

Add about 5 wontons at a time to your boiling broth and cover. Cook for a minute or two until they float to the top. When you have cooked all wontons, cook your bok choy and then mushrooms, each for only a minute or two, set aside. Taste your broth to make sure it is seasoned well. Add more soy if needed or water if you have boiled too much out. Cook noodles in boiling water or follow instructions on package. Assemble your bowls and ladle the broth over all the ingredients. Serve and enjoy!
