Dan Dan Noodles

Rich, Bright & Spicy Sichuan Street Food.

Vegan Dan Dan Noodles

Ingredients:

10 Oz. Udon Noodles (or choice)

12 Oz. Impossible Burger (or like)

2 Garlic Cloves, minced

1 tsp. Ginger, microplaned

1 Red Chili, small dice

1/2 tsp. Five Spice Powder

1 Tbsp. Soy or Tamari

1 Tbsp. Mirin

1/4 Cup Cornichons, small dice


Broth:

2 Cups Vegetable Broth

3 Tbsp. Soy Sauce

2 Tbsp. Tahini

1 Tbsp. Black Vinegar (rice ok)

1 Tbsp. Chili Sesame Oil

2 tsp. Coconut Sugar

1/4 tsp. Five Spice Powder


Garnish:

Cilantro

Green Onions

Roasted Peanuts, chopped


Serve with sauteed greens, such as Bok Choy


Serves 4


Method:


Cook noodles per package instructions. Toss in a little sesame oil or chili sesame and set aside.


Add the broth ingredients to a sauce pan and bring to a boil, turn off heat. Set aside.


Meanwhile, heat some oil in a pan. Saute ginger, garlic and red chili for a minute or two. Add your plant-based meat and sprinkle with 5 spice. Break up and cook through. At the end, add your soy, mirin and pickles. It is ready.


To assemble, add noodles to a bowl and ladle broth over noodles. Next, add plant meat, sprinkle with peanuts, cilantro and onions. Serve with a side of greens or add to the bowl, if desired. Enjoy!
