Bean, Green & Corn Soup

Healthy, delicious soup that's sweet & spicy!

Ingredients:
1 Onion, diced
2 Carrots, diced
2 Garlic Cloves, minced
2 Tbsp. Polenta
1 Tbsp. Tomato paste
15 Oz. Pinto Beans
1 Cup Corn
1 bu. Kale (or collards, swiss chard, etc.)
4 Cups Vegetable Broth
Aleppo Pepper or chili flakes, to taste
Salt & Pepper, to taste
Saute onions and carrots in a little oil over medium heat in a soup pot. I like to add a little salt and cracked pepper at this point just to get the flavors working. When the onions and carrots have softened, stir in garlic and cook a minute. Add aleppo pepper or chili flakes, I like to add about 1 tsp. for a bit of a kick but you can start with a half or quarter tsp. Remember, you can always add more later! Then, stir in tomato paste. Sprinkle in polenta and stir. Add beans, corn and chopped kale or greens of choice. Pour over broth and bring to a boil, then reduce to a low simmer. Cook for 30 minutes, stir occasionally. Season to taste with salt and pepper. Serve with your favorite bread or cornbread, if desired. Enjoy!
