Spinach Artichoke Dip

It's dairy- free, delicious and healthy.

This is one of my new favorite dips. It is wonderful served cold, at room temp or warm. It is super easy to put together and really, really good. This recipe happened one of the nights I was testing lasagna. My husband was in the kitchen dipping into my spinach "ricotta" mix with crackers. He thought it was good as it was, but garlic and artichoke would make it awesome. He was right!
Ingredients:
16 oz. Frozen Spinach, thawed
1 Cup Marinated Artichoke Hearts, chopped
2 Cups Slivered Almonds
1 Cup Water
1 Clove Garlic, minced
2 Tbsp. Lemon Juice
2 Tbsp. Nutritional Yeast
1 tsp. Salt
Method:
Squeeze all the water out of the spinach and add to a large bowl. Next add the artichokes and minced garlic.
In a high powered blender add slivered almonds, water, lemon juice, nutritional yeast and salt. Blend to make a sauce. Pour over the spinach mix and combine well.
It is delicious as is or you can gently warm it, just be sure not to cook the moisture out.
