Meatloaf & Mashed Potatoes

Made with vegan ground beef & quick oats.

2 - 14 Oz. Pkg. (Impossible) Burger
1 Cup Quick Oats
1/2 Onion, small dice
2 Garlic Cloves, minced
2 Tbsp. Soy Sauce or Tamari
1 tsp. Salt
1/2 Cup Milk
3 Tbsp. Flax Meal + 1/2 Cup Water
2 Tbsp. Tomato Paste
Pepper, to taste
a/n Ketchup or BBQ sauce for glaze & serving.
Mashed Potatoes:
3# Russet Potatoes, peeled & diced
1 1/2 Cups (Plain Nutpods) Cream (or similar)
1/4 Cup (Vegan) Butter
Salt & Pepper, to taste
Method:
Preheat your oven to 350 degrees and get a casserole dish or similar for your meat loaf.
Soak the flax meal in the water for 15 minutes in a small bowl.
In a large bowl add all of the ingredients including soaked flax meal. Mix well with your hands. place inside your casserole dish and form a loaf shape. Cook for 1 hour. With 10 minutes left on your loaf, glaze the top with some ketchup or BBQ sauce.
Meanwhile, let the butter and creamer come to room temp or warm slightly. Place the potatoes in a pot of cold, salted water. Bring to a boil, reduce to a simmer and cook until tender, strain. Let them steam for 5 minutes in the colander before mashing or ricing. This will create a fluffier potato and make them less water logged. Stir in the warm butter and cream. Salt and pepper to taste.
Serve with your favorite vegetable side dish or my green bean casserole. Enjoy!
