Black beans, soy chorizo and a cheesy sauce.

Serves 6
Ingredients:
1 Bag Tortilla Chips
6 oz. Soy Chorizo
1 Can Black Beans, rinsed
1 Jalapeno, minced
1 Garlic Clove, minced
1/2 Bell Pepper, diced
1/4 Onion, diced
Saute onion, bell pepper and jalapeno until tender. Add the garlic and cook through for a minute or two while stirring. Add the chorizo and black beans and warm through. Sprinkle over chips after the cheese sauce.
Cheesy Nooch Sauce:
3 Small Russets, peeled and diced
1 Small Carrot, peeled and diced
1/4 Cup Nutritional Yeast
1 tsp. Salt
2 tsp. White Vinegar
Cook the carrot and potatoes in water until tender. Strain. Add everything to a blender. Pulse and push down the mixture and repeat until it comes together. Blend until smooth. Pour or spoon over chips.
Cashew Cream:
1 Cup Cashews
1/2 Cup Water
2 Tbsp. White Vinegar
1/2 tsp. Salt
Add all ingredients to a high speed blender and blend until smooth. Refrigerate for at least an hour. Spoon or drizzle over nachos.

Hot Sauce
Tomatoes
Pico
