Coconut Maple Granola

With nuts, seeds, cinnamon & vanilla.

Coconut Maple Granola in Soy Milk

Ingredients:

3 Cups Rolled Oats

1/2 Cup Walnuts, chopped

1/2 Cup Pumpkin Seeds

1/2 Cup Sliced Almonds

1/2 Cup Maple Syrup

1/4 Cup Sunflower Seeds

1/4 Cup Coconut Flake or Shred

1/4 Cup Nut or Seed Butter

1 tsp. Vanilla

1 Tbsp. Cinnamon

1/2 tsp. Salt

Optional: 1 Cup Dried Fruit


Method:


Mix all ingredients in a large bowl (add chia, flax an/or hemp is desired). Line a sheet tray with parchment paper. Spread the granola mixture out evenly on the sheet tray. Bake at 300 degrees for 30 minutes. Let it cool completely. Add 1 cup of dried fruit. I added blueberries but you can add cranberries, strawberries, raisins, etc. Enjoy!
