Curried Chickpea Salad

With roasted cashews, apple & celery.

Curried Chickpea Salad

Ingredients:

1 Can Chickpeas

1/2 Cup Cashews, roasted

1/4 Cup Vegan Mayo

1 Celery Stalks, small dice

1 Green Onion, thin sliced

1/4 Cup Small Apple, diced

1 tsp. Curry Powder

2 tsp. Lime

Salt, to taste


Roast your cashews if they are raw. I cook them for about 10 minutes at 350. Cool and rough chop. Next, drain and rinse your chickpeas. Smash them a little with a fork or a potato masher. You want a good mix of smashed and whole. Add the rest of your ingredients and mix well. I hope you enjoy!
