Stewed Hungarian dish with paprika!

Ingredients:
1 Onion, diced
5 Garlic cloves, minced
3 Tbsp. Paprika
2 Tbsp. AP Flour
1 Cup Vegetable stock
1 Can Tomatoes, diced or 1 1/2 cups
1 Can Chickpeas, rinsed or 1 1/2 cups, cooked
Salt, to taste
Serves 4-6
Sauté the onions with a pinch of salt on medium heat and start to caramelize.
Add garlic and cook about one minute.
Add paprika and flour, stir and cook for about 2 minutes to toast the paprika and cook out the raw flour.
Add vegetable stock, tomatoes (juice and all) and chickpeas.
Bring to a boil and then set to low and cover.
Cook covered on low heat stirring occasionally for 20 minutes.
Salt to taste.
I serve with it with rice, a green vegetable like like zucchini and of course - vegan sour cream. Sour cream and paprika are two Hungarian staples.
I hope you enjoy!
Simple to make but has great flavor, I think I either had some at your house and/or Dustin brought some into work. I assume that is some zucchini from your garden because it looks bright and crisp. Great dish, I'll make this dish sometime this weekend. I'll send a photo when I do.
